Panna Cotta (with Wild Woods Fruit Sauce)

Ingredients: (Panna Cotta)
  • 2 ¼ cups whipping cream
  • 2 ¼ cups milk
  • 1 packet gelatin
  • 1 cup sugar
  • ½ tsp. vanilla or 1 tsp. vanilla powder if available
Ingredients: (Wild Woods Fruit Sauce)
  • 2 ¼ pounds wild fruits of the woods
    [strawberries, huckleberries, blueberries, raspberries]
  • 4 ½ cups water
  • 1 pound sugar

Directions:

Boil the whipping cream with milk and sugar. Add the gelatin and stir, dissolving the gelatin. Strain through a fine mesh sieve or a Chinese strainer and pour into small molds. Refrigerate for at least six hours.

Boil Wild Woods Sauce ingredients together for 30 minutes and allow to cool. Pour sauce in the bottom of a dessert plate. Unmold the panna cotta and place on top of the sauce. Garnish with a few berries and mint leaves or sprinkle with powdered sugar.

Makes 6 to 8 servings, depending on the size of the molds.
